The Truth About Home Cooking

Why do so many Americans eat tons of processed food, the stuff that is correctly called junk(垃圾) and should really carry warning labels?

It's not because fresh ingredients are hard to come by. Supermarkets offer more variety than ever, and there are over four times as many farmers markets in the US as there were 20 years ago. Nor is it for lack of available information. There are plenty of recipes(食谱), how-to videos and cooking classes available to anyone who has a computer, smartphone or television. If anything, the information is overwhelming.

And yet we aren't cooking. If you eat three meals a day and behave like most Americans, you probably get at least a third of your daily calories(卡路里) outside the home. Nearly two-thirds of us grab fast food once a week, and we get almost 25% of our daily calories from snacks. So we're eating out or taking in, and we don't sit down—or we do, but we hurry.

Shouldn't preparing—and consuming—food be a source of comfort, pride, health, well-being, relaxation, sociability? Something that connects us to other humans? Why would we want to outsource(外包) this basic task, especially when outsourcing it is so harmful?

When I talk about cooking, I'm not talking about creating elaborate dinner parties or three-day science projects. I'm talking about simple, easy, everyday meals. My mission is to encourage green hands and those lacking time or memory to feed themselves. That means we need modest, realistic expectations, and we need to teach people to cook food that's good enough to share with family and friends.

Perhaps a return to real cooking needn't be far off. A recent Harris poll revealed that 79% of Americans say they enjoy cooking and 30% "love it"; 14% admit to not enjoying kitchen work and just 7% won't go near the stove at all. But this doesn't necessarily translate to real cooking, and the result of this survey shouldn't surprise anyone: 52% of those 65 or older cook at home five or more times per week; only a third of young people do.

Back in the 1950s most of us grew up in households where Mom cooked virtually every night. The intention to put a home-cooked meal on the table was pretty much universal. Most people couldn't afford to do otherwise.

Although frozen dinners were invented in the '40s, their popularity didn't boom until televisions became popular a decade or so later. Since then, packaged, pre-prepared meals have been what's for dinner. The microwave and fast-food chains were the biggest catalysts(催化剂), but the big food companies—which want to sell anything except the raw ingredients that go into cooking—made the home cook an endangered species.

Still, I find it strange that only a third of young people report preparing meals at home regularly. Isn't this the same crowd that rails against processed junk and champions craft cooking? And isn't this the generation who say they're concerned about their health and the well-being of the planet? If these are truly the values of many young people, then their behavior doesn't match their beliefs.

There have been half-hearted but well-publicized efforts by some food companies to reduce calories in their processed foods, but the Standard American Diet is still the polar opposite of the healthy, mostly plant-based diet that just about every expert says we should be eating. Considering that the government's standards are not nearly ambitious enough, the picture is clear: by not cooking at home, we're not eating the right things, and the consequences are hard to overstate.

To help quantify(量化) the costs of a poor diet, I recently tried to estimate this impact in terms of a most famous food, the burger(汉堡包). I concluded that the profit from burgers is more than offset by the damage they cause in health problems and environmental harm.

Cooking real food is the best defense—not to mention that any meal you're likely to eat at home contains about 200 fewer calories than one you would eat in a restaurant.

To those Americans for whom money is a concern, my advice is simple: Buy what you can afford, and cook it yourself. The common prescription is to primarily shop the grocery store, since that's where fresh produce, meat and seafood, and dairy are. And to save money and still eat well you don't need local, organic ingredients; all you need is real food. I'm not saying local food isn't better; it is. But there is plenty of decent food in the grocery stores.

The other sections you should get to know are the frozen foods and the canned goods. Frozen produce is still produce; canned tomatoes are still tomatoes. Just make sure you're getting real food without tons of added salt or sugar. Ask yourself, would Grandma consider this food? Does it look like something that might occur in nature? It's pretty much common sense: you want to buy food, not unidentifiable foodlike objects.

You don't have to hit the grocery store daily, nor do you need an abundance of skill. Since fewer than half of Americans say they cook at an intermediate level and only 20% describe their cooking skills as advanced, the crisis is one of confidence. And the only remedy for that is practice. There's nothing mysterious about cooking the evening meal. You just have to do a little thinking ahead and redefine what qualifies as dinner. Like any skill, cooking gets easier as you do it more: every time you cook, you advance your level of skills. Someday you won't even need recipes. My advice is that you not pay attention to the number of steps and ingredients, because they can be deceiving.

Time, I realize, is the biggest obstacle to cooking for most people. You must adjust your priorities to find time to cook. For instance, you can move a TV to the kitchen and watch your favorite shows while you're standing at the sink. No one is asking you to give up activities you like, but if you're watching food shows on TV, try cooking instead.

What does the author imply about the processed food eaten by many Americans?

    • A It is becoming unavailable in American supermarkets.
    • B It is an acceptable substitute for ordinary food.
    • C It deserves a warning rather than being treated as acceptable food.
    • D It should be reserved for people who cannot cook.
    • E It must be banned from sale immediately.
    • F It is preferred because it tastes better than fresh food.

正确项保留了 deserves a warning 这一直接含义,并以 rather than being treated as acceptable food 概括 junk 所表达的否定评价,没有把警示进一步具体化为原文未说明的某一种危害。

What does the author say about the cooking information available nowadays?

    • A It is difficult to access without a smartphone.
    • B It is mainly provided by farmers markets.
    • C It is too professional for ordinary people to understand.
    • D It is so abundant that it may be difficult to deal with.
    • E It has become less reliable over the past 20 years.
    • F It is available only through cooking classes.

正确项以 so abundant 对应 plenty of,并用 difficult to deal with 改写 overwhelming,信息维度和程度均与原文一致。

然后揭示真实 behavior:people 不在家 cook, frequently 吃 fast food 和 snacks, eating habits 变得 hurried and disconnected。

Introduction 部分通过 contrast(resources 充足 vs. behavior 不理想)establish 文章要解决的 central problem,为后续 argument about home cooking 的 necessity 奠定 foundation,让 readers 意识到这个 dietary crisis 的 paradoxical nature。

接着用 survey data 揭示 contradiction:虽然多数 Americans claim to enjoy cooking,但 actual practice 很 limited, especially among young people。然后通过 historical comparison(1950s home cooking culture)contrast 当代 situation, explain processed food industry 如何让 home cook become endangered species。

这个 section 执行双重 function:一是 define 作者 advocating 的 cooking(simple and accessible),避免 readers 误解为 time-consuming projects;二是用 data 和 historical context 深化 problem 的 severity, especially highlighting the generational gap 和 industry influence,为后续 health and environmental consequences 的 discussion 做 groundwork。

这个 sub-argument 聚焦 consequences:首先指出 Standard American Diet 和 healthy plant-based diet 的 stark contrast,强调 government standards 都不够 ambitious, not cooking at home 导致 serious health and environmental damage。

用 concrete example(burger quantification)make abstract problems tangible,用 numerical data(200 fewer calories)provide measurable benefit。这个 段落 transform discussion from behavioral observation 到 stakes establishment,为接下来的 practical solutions 创建 compelling motivation。

这个 final sub-argument 提供 comprehensive practical guidance:对 budget-conscious people,建议 buy affordable real food 并 cook yourself, focus on grocery store 的 fresh produce 和 basics,不需要 local organic ingredients。 最后 tackle time obstacle:adjust priorities, integrate cooking 和其他 activities(比如 watch shows while cooking)。

这个 section 是 argument 的 payoff,将 abstract advocacy(cook at home)transform into concrete, actionable steps。通过 address common barriers(money, skill, time)systematically, make the solution feel achievable。The practical tone 和 specific examples("would Grandma consider this food?")enhance credibility 和 relatability,完成从 problem identification 到 solution implementation 的 complete argumentative arc。

MAIN IDEA ·

议论文的 body paragraphs 会 develop the argument,通常通过 presenting causes、effects、contrasts 来 build up the case。 It's not because...Nor is it... 第4段 用 Shouldn't 和 Why would we 继续 question 现状,强化 author's disapproval。

议论文作者有时会 explicitly state their intention 或 goal,这是 most direct clue to the thesis。 When I talk about cooking... I'm talking about... My mission is to... 直接 declare author's purpose,明确说明要 encourage people to cook simple meals,这是 author's advocating position 的 clearest expression。

  4. 议论文的 conclusion 通常会 synthesize the argument 并 offer recommendations 或 solutions。 Buy what you can afford, and cook it yourself、Just make sure、Ask yourself、You must adjust,以及 advice structures 如 My advice is,这些都是 author 在 prescribe actions,体现了 advocating for home cooking 的 core message。

本文从 questioning processed food consumption (第1段),到 contrasting availability with actual behavior (第2段-4),再到 explicitly stating the mission to encourage cooking (第5段),最后 prescribing specific actions (第12段-16),这些 elements 共同构成了 return to home cooking with real ingredients 的 complete argument。

MAIN IDEA ·

The article argues that Americans should return to home cooking with real, whole ingredients instead of relying on processed foods and eating out. Despite having access to fresh food and cooking information, most people don't cook regularly, leading to health and environmental consequences that can be reversed through simple, everyday home-cooked meals.

我们把三条 clues 串联起来:首先 第2段 的 logical structure 建立了一个 contrast——information 很 plenty,但用 If anything 转折表示问题恰恰出在这里;其次 over- prefix 本身就携带「过度」的 semantic meaning;最后整段的 argumentative logic 揭示了一个 paradox:resources 越多,people 反而不 cook。

三条 clues 形成了完整的 inference chain:第4段 的 evaluative language(harmful、rhetorical question)establish 了这是个 negative practice;morphological analysis 中 out- 和 source 的 combination 提供了「external delegation」的 literal meaning;discourse-level connection 则把这个词 anchor 到具体的 behavior——choosing restaurants/processed food instead of home cooking。

在这个 context 里,microwave 和 fast-food 不生产 food,但它们 drastically lowered 获取 prepared meals 的 barrier, thus catalyzing the shift from home cooking to convenience food。

三条 clues convergence 到一个清晰的 meaning:parallel structure 确立了 rail against 与 champion 的 antonymous relationship,表示 opposition;rhetorical questions 的 argumentative force 显示这是 values-level 的 strong stance;discourse function 则揭示这种 opposition 带有 public、vocal 的性质,不是 private preference 而是 outspoken criticism。综合这些 layers, rail against 在此 context 指的是 publicly and vehemently criticize processed junk food。

这三个 angles 共同 confirm:quantify 是指 express something in numerical or measurable terms。

    P1 P4 P9

作者在 第1段 开篇就用 "Why do so many Americans eat tons of processed food" 这个 rhetorical question 直击核心问题,在 第4段 连续抛出四个 questions 追问 cooking 和 eating 的本质意义。

Why Shouldn't Isn't Wouldn't How can What if Who would

比如讨论 environmental issues 时可以问 "Why would we sacrifice our planet for temporary convenience?" Why would we [negative action] when [consequence is obvious]?" 或 "Shouldn't [positive action] be [expected outcome]?"

    P2 P3 P6 P11

作者在 第2段 用 "Supermarkets offer more variety" 和 "four times as many farmers markets" 这些 concrete examples 来反驳 "fresh ingredients are hard to come by" 的 excuse。在 第3段 引用 specific statistics:"a third of daily calories outside home"、"two-thirds grab fast food once a week"、"25% from snacks",用 quantifiable data 来 demonstrate 问题的 severity。第6段 的 Harris poll data(79% enjoy cooking, 52% of elderly cook regularly)和 第11段 的 burger example 都是 evidence-based reasoning,让 abstract argument 变得 tangible and credible。

信号词 for example for instance such as consider look at take specifically in fact statistics show

先提出 assertion,然后用 specific numbers、research findings 或 observable phenomena 来 back it up,最后 explain 这个 example 如何 support 你的 thesis。 Consider the fact that [specific example/statistic]. This demonstrates [how it supports your point]."

第2段 对比 abundant resources(variety in supermarkets, information overload)和 actual behavior(people still don't cook),第6段-7 对比 past(1950s Mom cooked every night)和 present(only third of young people cook regularly),第9段 对比 young generation 的 stated values(anti-processed food, health-conscious)和 actual actions(don't cook at home)。这种 juxtaposition 暴露了 disconnect between ideals and reality,使 author 的 criticism 更加 sharp and undeniable。

信号词 but yet however while whereas in contrast on the other hand despite although back in

使用 parallel structure 来 emphasize the juxtaposition,比如 "While X does A, Y does B" 或 "In the past..., but now..."。模版:"Despite [positive condition/resource], [negative reality persists]." 或 "[Group A] claims to value X, yet [their behavior shows Y]." 关键是让 contrast serve your argument,不是为了 contrast 而 contrast。

    P8 P10 P11 P12

作者在 第8段 建立 causal chain:frozen dinners invention → TV popularity → packaged meals boom → microwave and fast-food chains as catalysts → big food companies' marketing → home cook becoming endangered。这个 chain 解释了 how we got here。第10段 和 第11段 通过 cause-effect logic 论证:not cooking at home (cause) → not eating right things (effect) → health problems and environmental harm (consequence)。第12段 提出 solution 的 causality:cooking at home (action) → 200 fewer calories (result)。

信号词 since because as a result consequently therefore thus leads to causes results in due to the reason

仿写: 构建 causal argument 时要 distinguish between correlation and causation,确保 link 是 logical 而非 coincidental。可以用 chain structure(A leads to B, which causes C)或 multiple causes leading to single effect。 When [action/condition], [immediate result], which in turn [further consequence]." 或 "The consequences of [action] are [effect 1] and [effect 2]." 要 provide evidence 或 reasoning 来 support the causal link,不能只是 assert。

    P15

第15段 用 cooking 类比 skill development:"Like any skill, cooking gets easier as you do it more: every time you cook, you advance your level of skills." 这个 analogy 把 intimidating task(cooking)和 familiar concept(skill acquisition)连接起来,让 readers 明白 cooking proficiency 是 achievable through practice,就像学习任何其他 skill 一样。这个 comparison 降低了 psychological barrier,让 cooking 显得 less daunting and more accessible。

信号词 like as similar to just as comparable to analogous to think of X as Y in the same way

不要 over-extend the comparison。 [Your topic] is like [familiar thing]: just as [aspect of familiar thing], [corresponding aspect of your topic]." 或 "Think of [topic] as [analog]; the more you [action], the [result]." 用完 analogy 后要 bring focus back to your actual topic,不要让 analogy overshadow your point。

    P4 P13 P14

第4段 用 parallel questions 创造 rhythmic effect:"Shouldn't preparing—and consuming—food be a source of comfort, pride, health, well-being, relaxation, sociability?" 这串 nouns(comfort, pride, health, well-being, relaxation, sociability)通过 parallel structure 累积 emotional impact,强调 cooking 应该带来的 multiple positive dimensions。

    信号词 and or both...and not only...but also first...second...third whether...or

[Action] should be a source of [noun 1], [noun 2], [noun 3], and [noun 4]." 或 "We need [noun phrase], [noun phrase], and [noun phrase]." Lists of three (tricolon) 特别 powerful。

    P2
It's not because fresh ingredients are hard to come by. Supermarkets offer more variety than ever, and there are over four times as many farmers markets in the US as there were 20 years ago. Nor is it for lack of available information.

否定转折类 not because it's not that not for lack of it isn't because not due to the reason isn't not simply because

作者通过排除 eliminating 两个看似合理的借口 seemingly reasonable excuses——缺乏食材和缺乏信息 lack of ingredients and information,暗示美国人不做饭 Americans not cooking 的真正原因并非外部条件 external conditions,而是内在的选择和习惯 internal choices and habits。这为后文论证 sets up the argument 美国人需要改变行为模式 need to change behavioral patterns 奠定基础,强化了文章主旨 reinforces the thesis:问题不是能不能做 not about capability,而是愿不愿做 but about willingness。

    P3
And yet we aren't cooking. If you eat three meals a day and behave like most Americans, you probably get at least a third of your daily calories outside the home.

And yet and yet yet however but nevertheless nonetheless

作者用 and yet 制造了一个强烈的 paradox 悖论:明明条件具备 conditions are met,美国人却still不做饭 still don't cook,反而依赖外食和快餐 rely on eating out and fast food。这个转折揭示了行为惯性的问题 behavioral inertia problem,暗示改变需要的不是更多资源 more resources,而是意识和意愿的转变 shift in awareness and willingness。这直接支撑了文章主旨 directly supports the thesis:呼吁人们回归家庭烹饪 return to home cooking,因为障碍不在外部而在内部 obstacle is internal not external。

    P4
Shouldn't preparing—and consuming—food be a source of comfort, pride, health, well-being, relaxation, sociability? Something that connects us to other humans? Why would we want to outsource this basic task, especially when outsourcing it is so harmful?

Shouldn't...? Why would...? shouldn't why would wouldn't isn't it doesn't it how could

作者通过两个反问 two rhetorical questions 表达了强烈立场 strong stance:烹饪本应是一种享受和连接 cooking should be enjoyment and connection(第一问的言外之意是'当然应该 of course it should'),而外包烹饪是不合理的 outsourcing is unreasonable(第二问的言外之意是'没有理由 there's no reason')。这种反问修辞 rhetorical questioning 比直接批判 direct criticism 更能引发读者反思 provoke reflection,强化了文章主旨 strengthens the thesis:人们应该重新拥抱家庭烹饪 should re-embrace home cooking,因为它的价值被低估和忽视了 its value has been underestimated and ignored。

    P6
A recent Harris poll revealed that 79% of Americans say they enjoy cooking and 30% 'love it'; 14% admit to not enjoying kitchen work and just 7% won't go near the stove at all. But this doesn't necessarily translate to real cooking, and the result of this survey shouldn't surprise anyone: 52% of those 65 or older cook at home five or more times per week; only a third of young people do.

But this doesn't necessarily translate to doesn't necessarily translate to doesn't mean doesn't automatically lead to not necessarily may not reflect doesn't guarantee

作者用这个转折 this transition 揭示了一个关键矛盾 key contradiction:虽然大多数美国人声称喜欢烹饪 claim to enjoy cooking,但实际做饭频率 actual cooking frequency 却很低,尤其是年轻人 especially young people。 这强化了文章主旨 reinforces the thesis:需要将烹饪意愿转化为实际行动 translate cooking willingness into actual practice。

    P9
Still, I find it strange that only a third of young people report preparing meals at home regularly. Isn't this the same crowd that rails against processed junk and champions craft cooking? And isn't this the generation who say they're concerned about their health and the well-being of the planet? If these are truly the values of many young people, then their behavior doesn't match their beliefs.

Isn't this...? And isn't this...? If...then isn't this aren't these if...then their behavior doesn't match if these are...then why wouldn't this be shouldn't this be

作者通过这组反问 this set of questions 直接质疑年轻人 challenges young people:既然你们反对加工食品 oppose processed food、推崇手工烹饪 champion craft cooking、关注健康和环保 care about health and environment,为什么actual cooking rate 实际烹饪率却如此低 so low? 这直接服务于文章主旨 directly serves the thesis:呼吁人们(特别是年轻人)将价值观付诸实践 put values into practice,真正开始在家做饭 actually start cooking at home。

    P10
There have been half-hearted but well-publicized efforts by some food companies to reduce calories in their processed foods, but the Standard American Diet is still the polar opposite of the healthy, mostly plant-based diet that just about every expert says we should be eating.

对比修饰语 half-hearted but well-publicized token but celebrated minimal yet hyped superficial but advertised modest yet trumpeted symbolic but promoted

作者用 half-hearted but well-publicized 这个精准的措辞 precise wording 批评食品公司 criticizes food companies:他们的减卡路里努力 calorie-reduction efforts 只是做做样子 just for show,虽然宣传得很响 heavily promoted 但并不真心 not sincere。 这个言外之意揭示了 reveals:依赖食品公司改革是不现实的 relying on food companies is unrealistic,消费者必须自己采取行动 consumers must act themselves。这直接支撑文章主旨 directly supports thesis:解决之道是个人回归家庭烹饪 solution is individual return to home cooking,而非等待企业改变 not waiting for corporate change。

    P15
Since fewer than half of Americans say they cook at an intermediate level and only 20% describe their cooking skills as advanced, the crisis is one of confidence. And the only remedy for that is practice.

重新定义问题 the crisis is one of confidence the crisis is one of the problem is not...but it's really about the real issue is at its core, this is fundamentally, this is

作者在这里做了一个关键的 conceptual turn 概念转向:虽然数据显示大多数人 most people 烹饪技能不高 cooking skills are limited,但真正的问题 real problem 不是技能缺失 skill deficit,而是信心不足 lack of confidence。 这个言外之意是在安慰和鼓励读者 reassure and encourage readers:做饭并不难 cooking is not hard,你只是缺乏信心和练习 just lack confidence and practice。通过重新定义问题 redefining the problem,作者降低了烹饪的门槛 lowers the barrier,让读者觉得这是可以实现的 achievable,从而更有力地支撑文章主旨 more powerfully supports thesis:每个人都可以回归家庭烹饪 everyone can return to home cooking。

    P16
Time, I realize, is the biggest obstacle to cooking for most people. You must adjust your priorities to find time to cook. For instance, you can move a TV to the kitchen and watch your favorite shows while you're standing at the sink.

I realize...You must I realize...you must I understand...but you need to I know...however you should granted...still you must admittedly...yet you have to

作者用 I realize 先承认时间确实是最大的障碍 biggest obstacle,展现理解和同理心 understanding and empathy,然后用 you must 强调必须调整优先级 must adjust priorities。这个言外之意是在告诉读者 tells readers:时间不是借口 time is not an excuse,只是优先级问题 just a priority issue。 这个结构巧妙地 cleverly 将最常见的反对理由 most common objection(没时间 no time)转化为可解决的问题 solvable problem,最终服务于文章主旨 serves the thesis:只要调整优先级 adjust priorities,人人都能回归家庭烹饪 everyone can return to home cooking。

AUTHOR ATTITUDE ·

议论文中,作者会通过 problem description 加 ideal state contrast 来 reveal their position。

议论文作者用 I、my mission 这种 personal pronouns 配合 encourage、teach 等 action verbs,就是在 explicitly state their goal,这是判断 attitude 最直接的 evidence。

本文 title 是 'HOW TO EAT WELL',第一段立即抛出 rhetorical question:'Why do so many Americans eat tons of processed food?'。 说明文会直接解释 'what' 或 'how',新闻报道会陈述 'what happened',而议论文会质疑 'why' 并准备展开 reasoning。

第二段开头连续使用 'It's not because...' 和 'Nor is it for...',这是典型的 refutation pattern。 说明文只会解释 'what is',不会辩驳 'what is not';新闻报道呈现 different perspectives 但不会像这样明确 refute。

    第四段集中使用了 'Shouldn't...?'、'Why would we want to...' 等 rhetorical questions,表达了明确的 value judgment:preparing food 'should be' a source of comfort 和 well-being,而 outsourcing it 'is harmful'。 说明文是 descriptive(描述事实),新闻是 reportive(报道事件),只有议论文是 prescriptive(表达应然)。

第五段作者明确说明 'My mission is to encourage...' 并给出具体的 approach('simple, easy, everyday meals')。第十三段直接说 'my advice is simple: Buy what you can afford, and cook it yourself'。这种 direct address to readers 和 imperative mood('Buy', 'cook')是 persuasive writing 的标志。说明文提供 information,新闻提供 facts,但只有议论文会直接 urge readers to take action。

第六段引用 Harris poll 的数据('79% enjoy cooking', '52% of those 65 or older...'),但这些 statistics 不是为了单纯 inform,而是为了 support 作者的 implicit argument:虽然人们 enjoy cooking,但 young people 做得不够。第十一段提到 'I recently tried to estimate' burger 的 cost,这种 author-driven analysis 是为了 prove a point('the damage they cause')。
