How to Eat Well

Why do so many Americans eat tons of processed food, the stuff that is correctly called junk(垃圾) and should really carry warning labels?

It's not because fresh ingredients are hard to come by. Supermarkets offer more variety than ever, and there are over four times as many farmers' markets in the U.S. as there were 20 years ago. Nor is it for lack of available information. There are plenty of recipes(食谱) how-to videos and cooking classes available to anyone who has a computer, smartphone or television. If anything, the information is overwhelming.

And yet we aren't cooking. If you eat three meals a day and behave like most Americans, you probably get at least a third of your daily calories(卡路里) outside the home. Nearly two thirds of us grab fast food once a week, and we get almost 25% of our daily calories from snacks. So we're eating out or taking in, and we don't sit down—or we do, but we hurry.

Shouldn't preparing—and consuming—food be a source of comfort, pride, health, well-being, relaxation, sociability? Something that connects us to other humans? Why should we want to outsource(外包) this basic task, especially when outsourcing it is so harmful?

When I talk about cooking, I'm not talking about creating elaborate dinner parties or three-day science projects. I'm talking about simple, easy, everyday meals. My mission is to encourage green hands and those lacking time or money to feed themselves. That means we need modest, realistic expectations, and we need to teach people to cook food that's good enough to share with family and friends.

Perhaps a return to real cooking needn't be far off. A recent Harris poll revealed that 79% of Americans say they enjoy cooking and 30% "love it"; 14% admit to not enjoying kitchen work and just 7% won't go near the stove at all. But this doesn't necessarily translate to real cooking, and the result of this survey shouldn't surprise anyone: 52% of those 65 or older cook at home five or more times per week; only a third of young people do.

Back in the 1950s most of us grew up in households where Mom cooked virtually every night. The intention to put a home-cooked meal on the table was pretty much universal. Most people couldn't afford to do otherwise.

Although frozen dinners were invented in the 40s, their popularity didn't boom until televisions became popular a decade or so later. Since then, packaged, pre-prepared meals have been what's for dinner. The microwave and fast-food chains were the biggest catalyst(催化剂), but the big food companies—which want to sell anything except the raw ingredients that go into cooking—made the home cook an endangered species.

Still, I find it strange that only a third of young people report preparing meals at home regularly. Isn't this the same crowd that rails against processed junk and champions craft cooking? And isn't this the generation who say they are concerned about their health and the well-being of the planet? If these are truly the values of many young people, then their behavior doesn't match their beliefs.

There have been half-hearted but well-publicized efforts by some food companies to reduce calories in their processed foods, but the Standard American Diet is still the polar opposite of the healthy, mostly plant-based diet that just about every expert says we should be eating. Considering that the government's standards are not nearly ambitious enough, the picture is clear: by not cooking at home, we're not eating the right things, and the consequences are hard to overstate.

To help quantify(量化) costs of a poor diet, I recently tried to estimate this impact in terms of a most famous food, the burger(汉堡包). I concluded that the profit from burgers is more than offset(抵消) by the damage they cause in health problems and environmental harm.

Cooking real food is the best defense—not to mention that any meal you're likely to eat at home contains about 200 fewer calories than one you would eat in a restaurant.

To those Americans for whom money is a concern, my advice is simple: Buy what you can afford, and cook it yourself. The common prescription is to primarily shop the grocery store, since that's where fresh produce, meat and seafood, and dairy are. And to save money and still eat well you don't need local, organic ingredients; all you need is real food. I'm not saying local food isn't better; it is. But there is plenty of decent food in the grocery stores.

The other sections you should get to know are the frozen foods and the canned goods. Frozen produce is still produce; canned tomatoes are still tomatoes. Just make sure you're getting real food without tons of added salt or sugar. Ask yourself, would Grandma consider this food? Does it look like something that might occur in nature? It's pretty much common sense: you want to buy food, not unidentifiable foodlike objects.

You don't have to hit the grocery store daily, nor do you need an abundance of skill. Since fewer than half of Americans say they cook at an intermediate level and only 20% describe their cooking skills as advanced, the crisis is one of confidence. And the only remedy for that is practice. There's nothing mysterious about cooking the evening meal. You just have to do a little thinking ahead and redefine what qualifies as dinner. Like any skill, cooking gets easier as you do it more; every time you cook, you advance your level of skills. Someday you won't even need recipes. My advice is that you not pay attention to the number of steps and ingredients, because they can be deceiving.

Time, I realize, is the biggest obstacle to cooking for most people. You must adjust your priorities to find time to cook. For instance, you can move a TV to the kitchen and watch your favorite shows while you're standing at the sink. No one is asking you to give up activities you like, but if you're watching food shows on TV, try cooking instead.

  1. P1

A Provocative Question about Junk Food

Many Americans eat large amounts of processed junk food, and the author questions why this is so.

  2. P2

    Not a Problem of Availability

The widespread consumption of processed food is not due to a shortage of fresh ingredients or cooking information; in fact, resources are more available than ever.

And yet we aren't cooking

  3. P3

    The Paradox of Not Cooking

Despite the abundance described earlier, Americans are not cooking; they obtain a large share of calories from eating out, fast food, and snacks, and meals are rushed.

  4. P4

Why Outsource a Basic Human Task?

Preparing and consuming food should be a meaningful, connecting, and health-giving part of life, so outsourcing this basic task is both strange and harmful.

  5. P5

    Cooking as Simple Everyday Meals

The author defines cooking as simple, easy, everyday meals and aims to help beginners, busy people, and those on a budget by setting modest, realistic expectations.

  6. P6

    Enjoyment Does Not Equal Practice

Though a majority of Americans enjoy cooking, this positive attitude does not translate into frequent home cooking, especially among young adults.

  7. P7

A Time When Mom Cooked Every Night

In the 1950s, cooking at home every night was a near-universal practice, largely because most families could not afford alternatives.

  8. P8

How the Food Industry Endangered Home Cooking

The rise of frozen dinners, television, microwaves, fast food, and big food companies turned home cooks into an endangered species.

  9. P9

Young People's Values vs. Their Plates

Only a third of young people cook regularly, which contradicts their expressed concerns about health, the environment, and processed food; their behavior does not match their beliefs.

  10. P10

The High Cost of Not Cooking

Despite weak industry and government efforts, the Standard American Diet remains extremely unhealthy; because people do not cook at home, they do not eat the right foods, and the consequences are enormous.

  11. P11

Counting the Real Cost of a Burger

Using the burger as an example, the author estimates that the profits from burgers are more than offset by their damage to health and the environment.

  12. P12

    Why Home Cooking Wins

Cooking real food at home is the best defense against an unhealthy diet, and home meals typically contain about 200 fewer calories than restaurant meals.

  13. P13

Good Food Need Not Be Fancy

For budget-conscious Americans, the advice is to buy what you can afford at grocery stores and cook it yourself; local organic ingredients are not necessary—real food is enough.

  14. P14

Frozen and Canned: Still Real Food

Frozen and canned products are acceptable if they are real food without excessive added salt or sugar; consumers should use commonsense tests to distinguish food from foodlike objects.

  15. P15

Confidence, Not Skill, Is the Culinary Crisis

The real cooking crisis is one of confidence, not ability; the remedy is practice, because cooking becomes easier each time you do it.

  16. P16

    Finding Time to Cook

For most people, the biggest obstacle to cooking is time; the solution is to adjust priorities and integrate cooking with enjoyable activities.

这个 opening 意群通过 a rhetorical question 引出了 the central problem:为什么 so many Americans 会 eat tons of processed food 这种应该被标注为 junk 的东西?这是典型的 problem-posing approach,用 questioning tone 来 engage readers 并establish the topic。

作为 expository writing 的 opening move,这个意群 establishes the problematic situation,为后续 explanation 和 advocacy 搭建了 foundation。

    这个意群通过 negative construction(It's not because...)来 eliminate two common assumptions:fresh ingredients 的 availability 和 cooking information 的 accessibility。作者用 factual evidence(farmers' markets 增加了四倍,recipes 和 videos 随处可得)来 demonstrate 这些 aren't the root causes。

在 explanatory discourse 中,这个意群执行 critical narrowing function,通过 ruling out obvious explanations 来 deepen the mystery 并 prepare readers for more fundamental causes。它 establishes 这不是 a simple resource problem,从而 justify 后续 deeper analysis。

这个意群用 'And yet' 作为 transition,通过 concrete statistics(a third of calories outside home, two thirds grab fast food weekly)来 depict the actual eating patterns。它 paints a picture of a society that's not cooking,用 behavioral data 来 substantiate the problem established earlier。

它用 quantitative evidence 来 establish the severity and prevalence of the issue,为 subsequent argumentation about solutions 提供 empirical foundation。

这个意群通过 a series of rhetorical questions 来 challenge readers' assumptions about cooking。作者问 shouldn't cooking be a source of comfort, pride, health,以及 why outsource this basic task 尤其是当 outsourcing 如此 harmful 的时候。这是从 factual description 转向 value-based argumentation。

在 expository-argumentative structure 中,这个意群 elevates the discussion from mere description to moral imperative。它 reframes cooking 不只是 practical activity 而是关乎 human connection 和 well-being 的 fundamental practice,从而 justify the advocacy that follows。

这个意群是作者的 mission statement,明确提出 'I'm talking about simple, easy, everyday meals' 而不是 elaborate dinner parties。作者 positions himself as advocate,目标是 encourage beginners 和那些 lacking time or money 的人去 feed themselves with modest, realistic expectations。

这个意群在 expository-advocacy structure 中 marks the pivot point,从 problem analysis 转向 solution proposition。它 establishes the author's stance 并 defines the scope of advocacy(simple cooking, not gourmet),为后续 detailed guidance 设定 parameters。

79% of Americans say they enjoy cooking,但 actual cooking frequency 在 young people 中很低(only a third cook five or more times weekly)。

在 expository structure 中,这个意群 provides survey evidence 来 support the need for intervention。它 reveals 不是 attitude problem(people claim to enjoy cooking)而是 behavioral problem,从而 refine the understanding of what needs to change。

作者 traces how microwave 和 big food companies 使 home cook 成为 endangered species,揭示了 structural forces 而非个人选择导致 current situation。

这个意群在 explanatory discourse 中 provides diachronic perspective, showing how current problems emerged from historical processes。它 shifts responsibility from individuals to systemic changes,从而 strengthen the argument that intervention is needed to counter these structural forces。

这个意群 singles out young people,指出 contradiction:虽然他们 rail against processed junk 并 champion craft cooking,声称关心 health 和 planet well-being,但 only a third regularly prepare meals at home。作者用 'their behavior doesn't match their beliefs' 来 challenge this generation's authenticity。

这个意群在 argumentative structure 中 serves confrontational function, calling out hypocrisy to create urgency for change。它 targets a specific demographic that should be most receptive to the message,用 values-behavior inconsistency 来 motivate action。

    这两个段落阐述 systemic consequences:food companies 的 half-hearted efforts,Standard American Diet 与 healthy plant-based diet 的 polar opposition,以及作者用 burger 来 quantify costs。核心点是 by not cooking at home,导致 health problems 和 environmental harm,consequences are hard to overstate。

这个意群在 argumentative structure 中 establishes stakes, showing that this isn't just personal preference issue 而是 matter of public health and environmental sustainability。它 quantifies harm 来 justify the urgency of returning to home cooking。

这个 solution-focused 意群从 第12段 的 general principle(cooking real food is the best defense)到 第13段-14 的 practical guidance:buy what you can afford and cook it yourself, shop grocery store perimeters for fresh produce, utilize frozen and canned goods, ensure you're getting real food without added salt or sugar。

它 addresses the 'how' question,特别针对 cost concerns 提供 affordable strategies,使 solution accessible to broader audience。

这两个段落 address remaining barriers:第15段 tackles skill and confidence('the crisis is one of confidence', 'the only remedy is practice'),第16段 addresses time constraints('adjust your priorities to find time')。作者 provides psychological encouragement 和 practical time-management suggestions 如 moving TV to kitchen。

这个 closing 意群在 expository-motivational structure 中 provides final push by addressing psychological and practical obstacles。它 normalizes lack of skill 并 reframes time as matter of priorities,从而 remove excuses and empower readers to act on the advocacy。

MAIN IDEA ·

说明文的 opening 通常会 pose a question 或 present a problem 来 establish the topic。这篇文章的 title 是 'HOW TO EAT WELL',第一段用 rhetorical question 'Why do so many Americans eat tons of processed food' 直接点出要 address 的 issue,这个 problem 就是整篇文章要 explain 和 solve 的核心

第2段 和 第3段 解释了 Americans 不 cook at home 的 reality (availability 不是 problem,但 behavior 仍是 eating out)。 这些 explanatory sections 帮助读者 understand the complexity of the issue,是判断 main idea 的关键 evidence

第4段 用 rhetorical questions 表达 author's viewpoint ('Shouldn't preparing food be a source of comfort')。第5段 明确说 'My mission is to encourage' 和 'we need to teach people',直接 reveal author's advocacy。第12段-16 都在 offer practical advice ('my advice is simple'、'just make sure')。

说明文会 emphasize why the issue matters。第10段 指出 'the consequences are hard to overstate',第11段 用 quantifiable impact (burgers 的 health problems and environmental harm) 来 illustrate severity。这些 consequence-focused statements 表明 author 不只在 describe problem,更在 stress its importance,这 reinforces 为什么需要 take action (即回归 home cooking)

这篇文章的 structure 是:开篇 pose question about processed food consumption (第1段),body explains reasons and barriers (第2段-9),middle-to-end advocates for home cooking solution (第5段, 12-16),并 emphasizes consequences of not acting (第10段-11)。Main idea 必须 capture 这个 complete arc:不仅是 'Americans eat processed food' 这个 observation,更是 'despite barriers, home cooking is the advocated solution' 这个 complete message

然后,通过 parallel structure,elaborate dinner parties 和 three-day science projects 放在一起,three-day 这个 time marker 告诉我们这是 time-consuming、complex 的事情。

Semantic field analysis 表明 outsource 和 eating out、taking in 属于同一个 conceptual category。三条 lines of evidence converge on:outsource 表示将原本应该自己做的 task(这里是 cooking)交给 external providers,即外包。

Prepositional collocation 'rail against' 后接 negative object(processed junk),配合 against 这个 opposition marker, establish 了 rail 的 oppositional nature。Parallel structure 中,rail against 和 champion 形成 semantic mirror, champion 是 strong support, rail against 就应该是 strong opposition。

Morphological analysis 显示 quant-ify 的 components 直接表达 'make into quantity' 这个 meaning。Semantic field analysis 确认 quantify 处于 measurement and calculation 的 context。

比如 '79% of Americans say they enjoy cooking','52% of those 65 or older cook at home five or more times per week','only a third of young people do',还有 'nearly two thirds of us grab fast food once a week','we get almost 25% of our daily calories from snacks',以及 'about 200 fewer calories' 等。这些 precise numbers 让读者对 American cooking habits 和 dietary problems 有了 concrete understanding,强化了作者关于 home cooking crisis 的论证,使得 argument 更加 convincing and authoritative。

信号词 % times third two thirds nearly almost about over fewer than only

According to [source], [X%/X number] of [group] [action/status], while [Y%/Y number] [contrasting action/status].'

    P11 P14 P16

最明显的是 burger example in 第11段,作者说 'I recently tried to estimate this impact in terms of a most famous food, the burger',用 hamburger 这个 familiar food item 来 quantify the costs of poor diet。还有 'frozen produce' 和 'canned tomatoes' 的例子在 第14段,以及 'moving a TV to the kitchen' 的 practical suggestion in 第16段。这些 specific instances 让 general advice 变得 relatable and actionable,帮助读者 connect theoretical concepts 和 real-life applications。

信号词 for example for instance such as like including in terms of take... for example

What's a concrete instance of this?' 选择 familiar、relatable 的 examples, preferably something your readers encounter in daily life。避免 obscure references。 For example/instance, [specific case]. This shows/illustrates/demonstrates [how it relates to your point].'

    P2 P6 P7 P8

第6段 对比了 '52% of those 65 or older cook at home five or more times per week' 和 'only a third of young people do',突出了 generational gap。 第2段 用 'there are over four times as many farmers' markets' 来进行 temporal comparison。这些 comparisons 帮助读者 appreciate the magnitude of change 和 understand the severity of current situation。

信号词 while but whereas unlike in contrast on the other hand however compared to than times as many

    仿写: 确定你要 compare 的 two subjects,明确 comparison 的 purpose(是要 highlight difference 还是 show similarity)。 While [Subject A] [characteristic/action], [Subject B] [contrasting characteristic/action].' 或 'Unlike [A], [B] [difference].'

    P6

作者在 第6段 引用了 'A recent Harris poll' 的 survey results,用 external source 来 support 自己的 argument about Americans' attitudes toward cooking。这个 citation 提供了 objective data,增强了 argument 的 credibility and authority。

信号词 poll survey study research according to data shows statistics reveal evidence suggests experts say report indicates

仿写: 当你需要 establish credibility 或 provide evidence for a claim 时,寻找 relevant authoritative sources。明确 cite the source(如 'According to [source]' 或 'A study by [organization] shows')。确保 quoted data or information directly supports your point。 According to [source], [data/finding]. This indicates/suggests/demonstrates [how it relates to your argument].'

    P5 P14

When I talk about cooking, I'm not talking about creating elaborate dinner parties or three-day science projects. I'm talking about simple, easy, everyday meals.' 这个 definition 很重要,因为它 clarifies the scope of discussion, prevents misunderstanding,让读者知道作者 advocates 的不是 complicated gourmet cooking,而是 accessible daily cooking。在 第14段,作者用 'real food' 和 'unidentifiable foodlike objects' 的对比来 define what counts as food,通过 'would Grandma consider this food?' 和 'Does it look like something that might occur in nature?'

I'm talking about I mean that is in other words defined as refers to means is by [term] I mean

仿写: 当你使用一个 potentially ambiguous term 或 concept 时,provide a clear definition。可以用 positive definition('X is...')和 negative definition('X is not...') When I refer to [term], I mean [what it is], not [what it is not/common misconception].' 或 'By [term], I'm talking about [specific definition].'

IMPLIED MEANING ·

    P2
It's not because fresh ingredients are hard to come by... Nor is it for lack of available information.

It's not because... Nor is it... It's not because Nor is it Not... but It's not that... it's that The problem isn't... the problem is Not for lack of

这种 implication 支撑文章主旨,将 focus 从 'what's available' 转向 'what people choose to do',为后续讨论 cooking priorities 和 lifestyle changes 奠定基础。

    P3
And yet we aren't cooking. If you eat three meals a day and behave like most Americans, you probably get at least a third of your daily calories outside the home.

And yet However Nevertheless Yet But Still In spite of this

尽管有 abundant resources 和 information,Americans 仍然 not cooking,这个 sharp contrast 暗示问题是 willingness 和 lifestyle choices,不是 capability。The statistics 关于 eating out 和 fast food 进一步说明这是 widespread behavioral pattern。

    P4
Shouldn't preparing—and consuming—food be a source of comfort, pride, health, well-being, relaxation, sociability? Something that connects us to other humans? Why should we want to outsource this basic task, especially when outsourcing it is so harmful?

Shouldn't... Why should we... Shouldn't Why should we Isn't it Don't we Wouldn't it be better How can we

这组 rhetorical questions 暗示:cooking 本应是 a meaningful, connecting activity,而 outsourcing it 违背 human nature 和 well-being。The implication 是当前的 eating habits 不仅 unhealthy,还 socially and emotionally impoverished。

    P9
Isn't this the same crowd that rails against processed junk and champions craft cooking? And isn't this the generation who say they are concerned about their health and the well-being of the planet? If these are truly the values of many young people, then their behavior doesn't match their beliefs.

Isn't this the same crowd... And isn't this the generation... Isn't this the same Aren't these the people who Isn't this the generation Aren't they the ones who Don't they claim to

作者暗示 young people 虽然 vocally support healthy eating 和 sustainability,但 cooking behavior 并未 reflect these values。The implication 是 genuine commitment 需要 translate into daily actions,不只是 verbal advocacy。这个 criticism 服务文章主旨:calling out the hypocrisy 增强 urgency,推动 target audience(尤其年轻人)认识到需要 align behavior with beliefs,从而接受作者倡导的 home cooking practice。

    P10
There have been half-hearted but well-publicized efforts by some food companies to reduce calories in their processed foods, but the Standard American Diet is still the polar opposite of the healthy, mostly plant-based diet... Considering that the government's standards are not nearly ambitious enough, the picture is clear

模糊限制语和否定加强类 half-hearted but... not nearly ambitious enough half-hearted not nearly enough barely hardly merely not nearly ambitious enough

作者暗示:food industry 和 government 的 efforts 是 inadequate 甚至 insincere(half-hearted, not ambitious),不能依赖 them 解决 diet problems。The implication 是 individuals 必须 take responsibility through home cooking。这强化文章主旨:既然 external solutions 失败了,the answer lies in personal action。这个 criticism 也为作者的 practical advice(buy real food, cook yourself)提供 justification,构成 'since they won't help us, we must help ourselves' 的 narrative logic。

    P15
Since fewer than half of Americans say they cook at an intermediate level and only 20% describe their cooking skills as advanced, the crisis is one of confidence.

Since... the crisis is one of confidence Since... the crisis is The problem is not... but It's not a matter of... it's The real issue is What we're really dealing with is

作者暗示:people 不 cook 不是因为 lack of skill,而是 lack of confidence,这意味着 barrier 是 psychological 和 easily overcome through practice。The implication 是 anyone can start cooking;不需要 advanced skills,只需要 willingness to try。这为文章主旨服务:降低 perceived difficulty,鼓励 more people 开始 home cooking。通过 reframe problem as confidence rather than competence,作者 make the solution more accessible,增强 persuasive appeal,尤其对 intimidated beginners。

    P16
Time, I realize, is the biggest obstacle to cooking for most people. You must adjust your priorities to find time to cook.

You must adjust your priorities You must You need to It's necessary to You have to The key is to You should prioritize

作者暗示:claiming no time for cooking 是 priority issue 而非 genuine constraint。The implication 是 people 有 time 但选择 spend it elsewhere,因此改变 cooking habits 是 feasible 的,只需 reorganize priorities。这强化文章主旨:home cooking 不是 impossible luxury 而是 achievable goal through conscious choices。通过 remove the legitimacy of 'no time' excuse,作者 make the call to action more compelling,暗示 resistance 是 about unwillingness rather than inability, pushing readers toward behavior change。

本文 title 是 HOW TO EAT WELL,明确表明是 instructional 性质。

第6段-9 提供 survey data 和 historical context 来 explain the trend。

  4. 第10段 到 第16段 提供了大量 practical advice(what to buy、how to cook、time management)。这部分是 instructional explanation 的延伸——在 explain 完 why people don't cook 之后,naturally transition to explaining how to overcome obstacles。

  5. 本文完整体现了说明文特征:用 HOW TO title 表明 instructional intent,通过 multi-layered explanation 剖析 American eating habits 这个 phenomenon,提供 historical and social context,最后给出 practical solutions。 虽然作者有 stance(people should cook),但 dominant mode 是 explaining 而非 arguing。
